His career has now seen him become a partner and director of the Abode Hotels group, and Michael Caines Restaurants in Exeter and four other cities.
Michael is also executive chef at Gidleigh Park in Chagford, and is a co-founder and director of the Exeter Festival of South West Food and Drink.
Born in Exeter in 1969, Michael gained his passion for food from his mother who he used to enjoy helping in the kitchen.
"I grew up in a large family, and my love of food and cooking came from the big family meals we always shared together, prepared by my mother, who was a wonderful cook," he recalls. "My father loved to grow vegetables and fruit in our garden, and so I grew up appreciating the flavours of the freshest foods, picked that day and simply prepared."
Michael is now relishing the chance to share his love and knowledge of cooking with others in his first cookbook.
It's been 19 years in the making, but he believes the timing was right to put everything he learned during his career down on paper.
Its emphasis is on home food and it contains some challenging techniques for people to push the boundaries of their cooking skills such as the veal glace which requires you to cook it for 48 hours. However, you can also buy it for those who want to go for the easier option.
The book itself is ordered by ingredients with sections on spices, vegetables, meat and fish, to name a few.
Michael's hope is that the book will inspire people and will be used as reference for learning and creating fantastic food.
The book costs £25, and is published by Century, part of Cornerstone Publishing.
